I eat chicken A LOT. And surprisingly, I don’t get too bored of it. But theres times where I don’t feel like having boneless chicken breasts for dinner five nights in a row. Yes, I do that sometimes because lets be honest, its easy.
You know what else is easy? This ‘ish right here. And theres no chicken in it! WIN.
This Cheesy Sausage & Broccoli Rice is pretty great.
When I used to nanny, I made this for the kiddos and had empty plates all around. And if a kid likes it, you know its good. Not only that, but its quick and easy to make. WIN, WIN if you ask me! Which you didn’t, but whatever.
Anyways, heres what you need.
Okay, got it? Now you’re ready.
First things first, if you don’t have a rice cooker, I suggest you get one. It’s the easiest thing ever and it does all the work of cooking rice for you. Plus it comes out PERF every time. Here’s a couple good ones from Target & Target ; I mean, lets be honest, Target is the best place ever. Bonus points if you go to Target to buy it and end up buying 10 other things you don’t need. Life’s short, buy the whole store.
OK so, place your rice in the rice cooker. Cooking instructions are different for each model, so just make sure to check your manual for the correct water-to-rice ratio. Most rice cookers will take about 20 min to cook rice completely, so do this first so that it’s one less thing to worry about.
If you have to do things the hard way or just don’t want to buy a rice cooker (which you REALLY should), just cook your rice how it says on the package. It should take about the same amount of time with just a couple more steps.
Start by putting your choice of oil in a large skillet. I like to use a wok, just because it’s easier to maintain once you near the end and have all the ingredients in the pan.
Toss in your onion and keep on medium heat until your onion starts to go clear, probably about 10 min or so.
While doing this, go ahead and boil/steam your broccoli. Whatever you choose. Really, no judgement here. Boil, steam….same difference. As long as it’s cooked.
Add in your sausage to your skillet w/ the onion, letting the sausage cook on medium heat until it begins to brown.
Lower your heat. By the time your sausage is cooked, your broccoli should be done. Drain it, and add it to your pan with the sausage and onion.
Mix in your onion salt, garlic powder, salt, and pepper and give it all a stir. Let it cook for about 5 minutes.
Add in your cooked rice to the pan, and mix it all together reaaaaaaal good.
No. No. How dare you? I did NOT forget the cheese. Add that amazingness in and mix it all together. Feel free to add more cheese, because why the hell not?
And next….oh wait. You’re done. Yep, it’s that easy.
Quick and easy? That’s my kind of meal. Especially when it actually tastes UHMAZING.
